Vivian is interested in studying the effect of intact plant cells (a neutral type I resistant starch) on metabolic health, including the macronutrients digestibility and colonic fermentation profiles with in-vitro and in-vivo models. She is also interested in developing the use of plant intact cells as a novel ingredient to process innovative low-GI food. Vivian works under the supervision of A/Prof. Sushil Dhittal, A/Prof. Jane Muir and Dr. Hamdi Jama.
